GRANOLA GRANDE
Makes a large batch of wholesome, lightly sweetened but delicious granola. |

INGREDIENTS
- 8 Cups Rolled Oats - not quick oats
- 1/2 Cup Rapadura - or regular sugar
- 1 Cup Raw Shredded Coconut
- 1 Cup Raw Pumpkin Seed
- 2 Cups Chopped Raw Nuts - walnuts, cashews, pecans.
- 1 Teaspoon Ea. Cinnamon and Salt

- 1/2 Cup Olive Oil
- 1/2 Cup Agave Syrup
- 2 Teaspoons Vanilla
- 3/4 Teaspoons Almond Extract
- After Granola is cooked add - Dried Cranberries, Blueberries, or Raisens

Preparation Instructions
- Mix all dry ingredients thoroughly. NOTE: Do not add dried fruits yet.
- Slowly heat Olive Oil and Agave. Remove from heat before hot. Cool just a bit, stir and then add Vanilla and Almond Extracts. Mix wet ingredients thoroughly. Add wet to dry ingredients in parts...stir thoroughly in between each wet addition.
- Preheat oven to 325 degrees.
- Spread mix somewhat thinly on cookie sheets. Bake about 5 minutes. Remove, stir or flip with spatula, and then quickly return to oven. Bake 3 to 5 minutes and repeat stirring. Bake a few minutes more. Do not overbake.
NOTE: Test and adjust baking time and temp to your own oven..
- While still hot, add a handful of any of the dried fruits and stir. Cool thoroughly before storing in your crock or packaging for gift.
This is very lightly sweetened granola. If desired, you can add your own maple syrup or other sweetener when serving. Try adding your granola to plain yogurt and toss in some fresh fruit.
Great gift packaged in a cellophane holiday bag and then place in a container.
